Discover the magic of the sea directly at De Oesterfabriek. Here you can enjoy fresh wild oysters (with various vinaigrettes), pluck bread with sea asparagus cream and oyster mushroom bitterballen.
Every day, fresh wild oysters are collected with love and care from the Terschelling Wad. To keep the ecological footprint as small as possible, they let the sea clean the oysters. You can taste the wild oysters with various delicious vinaigrettes, or a slice of lemon.
In addition to the delicious oysters, De Oesterfabriek also offers a spicy curry. And as a vegetarian snack, they have oyster mushroom bitterballen, grown on coffee grounds!


Just as they have done for years, they prefer ingredients from our beautiful island: Terschelling. Their herb and flower garden is a wonderful addition to their self-sufficiency and you can taste that in the dishes. As an ambassador of Dutch Cuisine and the Waddenvereniging, owner Werner Zuurman strives for sustainability in his own kitchen and environment, with respect for the island and the oyster bank. The wild creuse has been a permanent part of Werner’s kitchen for twenty years, first in the Caracol and later also at De Bras on West-Terschelling.
The Oyster Factory is now also working on realizing a business at Willembarendszkade 22, in the former Loodskantoor. This beautiful location will open its doors around Oeroldecember as ‘De Oesterbar van Werner’. Here you can not only taste oysters, shellfish and fish, but also take them home. They also organize Oyster Excursions, where guests take the ‘Oester Express’ to the wild oyster bank in the middle of the Wadden Sea. An extraordinary experience where you not only taste oysters and drink prosecco, but above all become one with nature and the serene silence of the Wadden Sea.
